These are so yummy and they are perfect for a Saturday morning for a treat or a great way to make a Monday morning a little better; and they have all the flavor you need so you dont have to add any extra syrup if you don’t want to! This recipe is from one of my favorite cookbooks “Skinny Bitch”

Here’s what you need:

1 cup flour

3 tablespoons evaporated cane sugar

2 teaspoons baking powder

½ teaspoon baking soda

1 ¼ teaspoon ground cinnamon, divided

1 cup non-dairy milk (I like almond milk)

1 teaspoon vanilla

2 tablespoons canola oil

3 tablespoons Earth Balance butter, divided

2 apples

1/3 cup pure maple syrup

¼ teaspoon ground nutmeg


Here’s what you do:

In a bowl combine the flour, sugar, baking powder, baking soda, and ¼ teaspoon cinnamon. In a different bowl, whisk together the milk, vanilla and oil. Combine the milk and flour mixtures and whisk until smooth. If the batter is thick add more milk. Heat 1 tablespoon earth balance butter in a large skillet or griddle over medium heat. Pour about ¼ cup of the better into the hot pan and cook until the batter starts to bubble. Flip with a spatula and cook until the other side is golden brown.

In a sauté pan melt the remaining butter. Add the apples and sauté about 2 min. Add the maple syrup, the rest of the cinnamon and the nutmeg. Stir and cook 2 min. place the maple apples on top of the pancakes.

*If you want a little extra flavor try using pumpkin pie spice instead of cinnamon

*If you dont want to use apples or want to change it up a bit, use any fruit you like!
